adb remount is supposed to do it, but doesn't seem to work on my device. Instead, it returns "remount failed: Unknown error: 0". Besides the suggestion of booting another distro from SD and updating the rootfs, you can also follow the instructions at http://wiki.openmoko.org/wiki/Userspace_root_image to create a new rootfs and then flash the device with it.
