A bit off topic: redmine is now working here with the passenger configuration.
The environment problem still exists with the fcgid module and redmine
installed as per /usr/share/doc/redmine/examples/apache2-alias.conf
Somehow, when adding:
FcgidInitialEnv RAILS_ENV production
to the Virtualhost (should solve the problem?) some of the errors
disappear, an empty page shows up, but the environment error stays.
Maybe something to look into at some point.
