Looks good to me, only the merged-/usr may need an extra paragraph as the directory is a little non obvious:
--hook-dir=/usr/share/mmdebstrap/hooks/ Alternatively move the setup00-merged-usr.sh to hooks/merged-usr/ maybe? Cheers Jochen
