I think that now ifrench-gut ships the right
 /var/lib/dictionaries-common/ispell/ifrench-gut
It correctly declares iso-8859-15 as coding-system, and œ ("o dans
l'e", oe run together) in Casechars for the "francais" dictionary. And
indeed, when checking the word "neud", the proposition is "nœud" and
gets correctly inserted. But if you then check the corrected word
(depending on cursor position), only the "n" or the "ud" is checked as
a word: the word-splitting incorrectly takes the œ as a word
separator. Even if the buffer-file-coding-system is iso-8859-15...

That's probably a bug in ispell.el or somewhere else in Emacs (mapping
table between mule/unicode and iso-8859-15?), not in the packaging of
ifrench-gut. (I tried both with and without mule-ucs.)
