Why not just store your mail in a different directory - say /var/exim? Does it hurt your eyes if it's not called /var/mail?

In login.conf you set user environment path to the user's mailbox (don't know if this is worth anything with Maildir), and configure exim to use that directory - this sounds like the easier solution.
