I honestly have not saved a new data file in over a decade.  So my data
files exist without an extension, and current GnuCash is happy with that.

If I really cared (which I don't), what I would do now is save the file
the first time, then rename it in the file system, and then open it under
the new name without the extension.

I'll note that I am FAIRLY sure that, e.g. Word does not allow you to save
without an extension.
