WinZip has a command line utility and the cost is minimal as it comes free
with the licensed version of WinZip.  You can write a command line script to
zip all the folders at once, and ftp (using Windows built-in FTP from the
command line) to transfer the zip file to another server, preferably in
another building in case of a fire, or you could have the script zip each
user folder and ftp it to each machine for safe keeping.  On the client side
you could use WU-FTP.  My preference would be one big zip in the middle of
the night.  This is, of course, another option to tape backup.

We use this method for redundant Microsoft SQL backups to a server 10 miles
away in case of a fire, and in case one of the backup tapes turns out to be
bad.  85% of all businesses go out of business after a fire destroys all
their data.

contact me off the list, and I can install it on your server for a small fee
if you have a licensed copy of WinZip.
