I prefer *BSD myself for servers.
I'll have to agree with x... If you're going to be learning something new anyway, go with a *BSD distro... My personal favorite is FreeBSD... Grab this book, http://www.oreilly.com/catalog/cfreebsd/index.html, and this online handbook, http://www.freebsd.org/doc/en_US.ISO8859-1/books/handbook/index.html, and spend a little time...
