Something like, well, maintenance? Like making sure everything is fine from a packaging point of view, merging new upstream releases and adapting the packaging accordingly. Fixing bugs. The question is rather: why aren't ubuntu folks working directly on the debian packages. “just copying” is a good recipe for a big failures. They might have Ubuntu-specific changes.
