In other words: you wan to run scanimage on the workstation; scanimage writes the scanned data into a file, and this file shall be located on the server. Yes, this is possible: you can create, read, write, modify and delete files on remote computers, provided that both machines are properly configured. If the server is also a Linux/Unix machine, use NFS (Network File System). Install the NFS server software on the server, configure the NFS server and mount a server volume on the workstation.
