I don't think you misunderstand how the 'Open With' dialog should work,
it sounds like something is off here.
For me at least, selecting an application by Right-Click Open With
Selecting App from drop-down is not permanent, I don't think it should
be. However, if I select 'Other Application'

You say that evolution crashes on load - is it possible for you to run a
Strace showing
I think I can reproduce the hang. It only happens for me when I navigate
to a partition mounted over NFS *while running strace*, however the
strace output is very similar during the crash, and clearly shows the
transition from normal operation to hang at 17:20:17.336678 (See
attached strace file
