The most recent was a developer workshop last year: https://wiki.lyrasis.org/display/DSPACE/2022-11+-+DSpace+7.4+Webinar+Series This workshop was brief though (only an hour) so it had to concentrate on higher level concepts in the UI. We don't yet have "deep dive" style developer workshop. I hope we could have that some day, but it may not come until after 7.x development is completed & we've moved on to 8.0... simply because the developers who could teach that workshop are all doing active feature development.
