We currently have an N1 chassis and an E7 chassis, with only 2 blades in
it, that we are thinking of combining into an N5. The N1 is for servers
and the E7 is used for workstations. I am wondering what people consider
best practice in this situation. Is having the servers on one blade

It sounds like you have a fairly small location, or you have
workstations intermixed in your data center.
My experience is that mixing the two in one chassis is fine, but I would
not put all of your servers on one blade. I would spread the servers out
just so if you loose one blade
