It's easier than that. You can have as many data files as you want, kind
of like when using Libre Office.
The biggest restriction is that you should only have one file open at a
time, else some strange things can happen .

It might be worth asking why OP is using /opt for their data files in the first
place. It is more usual for users to place their personal files in the /users
hierarchy (i.e., ~/).

what OSX called System Integrity Protection.
Try following the steps to turn off SIP here:

Catalina enforces some sort of permissions on folders these days. Check
System Preferences >> Security & Privacy - click on the Privacy tab and
scroll down to "Files and Folders" and

I upgraded to the newest version of GnuCash 3.8, and I am struggling
because the "Total" line on the budget screen has been removed. I always
used this line in previous versions to easily determine if I had extra
income or whether I was going to be short for the month.
Now I
So I started a new file. Then I imported csvs containing transactions which
have been pre-populated with Gnucash expense accounts. While Gnucash
expense accounts are in 1 currency, there are some accounts that have other
currencies.
