Chris, You create a multisplit transaction with the item names in the description/memo field and select the same expense account in the transfer account. GnuCash will automatically put the balance of the transaction in the next open credit field. Select the amount and override it for the correct

Enter it just as you described. You may want to change your view to, I think it is, Journal Mode. I would first type in the "line" or "split" to debit 'cash in pocket' (an asset account) for $3.49. The next split has the memo line 'one bar of chocolate' @$0.99. Note that GnC would have

Chris, First, I'd highly recommend while you are getting started to turn on View > Transaction Journal View. That way, you see all splits at all times and you don't have to fiddle with the split function or have things jump around with auto-split view. It also doesn't hide anything from
