You keep saying this. While I respect your choice to stay on the safe side,
the only way to know if gnucash 3.x works for you is to test it. That's pretty
easy in Windows.
So I encourage you to run a few tests on a backup of your data file and
evaluate how good or bad that works out.

Very interesting observation. So this may suggest the location of the mouse
cursor plays a role as well.
If you position the mouse cursor outside of the gnucash window, or over the
window's title bar instead of over an open register, does that make a
difference for the save performance ?

sudo make install
If you don't run these successfully, nothing will appear in /usr/local.
Note make install is run via sudo. On a typical linux system ordinary users
are not allowed to write into /usr/local unless they have administrator

gnc-build-userdata-path is defined in libgnc-core-utils.so, a shared library
part of gnucash. This particular symbol was introduced for gnucash 3.x or
shortly before that in the 2.7 development series to be precise.
The error suggests this shared library is not found or more likely

The error suggests the code can't find the definition of function
gnc-build-userdata-path
That's a new function that was introduced for the gnucash 3-series. So if you
get this error while
trying to run gnucash 3.1, that suggests a packaging bug.

I'm afraid I have to agree with Victor. Currently what you are looking for
can't be done directly in gnucash. The check printing code extracts its
information from transaction splits. However the Bill details you want to
include are currently not stored in splits, but in the business
