I'm looking into converting the CSV format my bank uses to QIF.
While importing my current test file I get an additional dialog: "set
date format for this QIF file".
It says that the current QIF file does not specify which order the
day, month and year components of a date are printed.

You've got that correct. Replication, just like e.g. RAID protects against
some forms of data loss but it is not a full backup solution.
It could be part of it though, e.g. if running a more permanent backup from
the slave is easier than running it on the master.
