I start with a clean directory
mkdir pv53
cd pv53
git clone --recursive
https://gitlab.kitware.com/paraview/paraview-superbuild.git
cd paraview-superbuild
git fetch --tags origin
git checkout v5.3.0
-> error: pathspec 'v5.3.0' did not match any file(s) known
