I just found out that evolution already prefers gnupg2 if it's installed. With 
the new gnupg2 from experimental I made an ECC key which the old gnupg 1.4 
doestn't support.
Signing a test mail to my self with it worked fine. And it also said in the 
Header it used gpg v2.
Though it only Suggests: gnupg

The gnupg package is now based on gnupg 2.1 (modern). So this bug report
is obsolete.
