When attempting to select text in Recipe Editor, Nutrients tab, General tab,
all the data in the table is 'grayed out' and not selectable. This makes it
impossible to copy-paste this data and share it.

The entire package is years out of date. Those constants haven’t existed since
2011 as best I can tell.
If this package isn’t going to be updated, I would suggest removing it entirely.
