The build-dependency on python-xapian is not new, Sphinx has it since 2011
(see the changelog entry for 1.1.2+dfsg-1).
However, I only need it for tests, so it is safe to remove (and I can add
it to the autopkgtests to make sure nothing breaks when Xapian is upgraded).

This is probably because you hardcoded Gnome in Keyring configuration file,
however that backend was removed in Keyring 8.x (moved to keyrings.alt package).
The recommeneded alternative is to install python-secretstorage and let Keyring
called from Debian package build (one may not
always be using dpkg-buildpackage or even debhelper, and instead calling
sphinx-build manually from build: target in debian/rules).
Better ideas are welcome, of course.

The python3.4 modules are named correctly.
Looking at contents of amd64 packages, it seems the situation is opposite there:
python3.3 modules are named correctly and python3.4 ones are broken.
