Hi,
I'd be interested in best practices as well. I'm using offlineimap + neomutt + 
msmtp in an AppVM for my emails.
I do HTML rendering with lynx in the email AppVM. Since it doesn't do 
JavaScript I don't see a reason for me to fire up a disposable VM for the HTMl 
emails that I receive.
I usually save attachments to disk and then open them in disposable VMs. 
Therefore my mailcap file is rather sparse:

text/html; lynx -assume_charset=%{charset} -display_charset=utf-8 -dump %s; 
nametemplate=%s.html; copiousoutput
