You've removed the buddy, but for the most part that doesn't mean they
can't write to you.
You'd need to add them to your Blocked Buddy list.
Tools, Privacy, add them in there, and change to the appropriate action,
ie Block only the people below.

You ARE essentially removing them.
The point of most chat protocols is to allow anyone to contact you - ie
if I knew your screen name, I could message you. So if you don't want
someone to contact you, you are blocking them, or basically 'removing'
them. Same thing.
Can you check your privacy settings?
On the buddy list, select the Tools menu then Privacy
From that screen you can define who can contact you or not.
It just wonders me, because in Microsoft's MSN for Windows, it is
possible to delete a buddy.
Or that is atleast how it looks in Pidgin.

Your wifi? Someone elses WiFi? What version of Pidgin? What error
message? Can you connect to say MSN? AIM?

The E61 runs on Symbian OS, which I believe is not supported by
pidgin. So my guess is there's no easy way to run pidgin on your phone.

Assuming you're using Windows, the SOP for dealing with this type of thing
is to reinstall both GTK+ and Pidgin while no other GTK+ applications are
running (immediately after a reboot would be best to ensure
the 'show offline' selected.
I don't know why that would happen... you could try opening the debug window
(Help-Debug Window) and trying to sign on and either looking through the
output for errors or maybe pasting it here (after removing any information you
don't want other people to see).

Recently I'm getting a Windows Socket Error #10061 with all Protocols i
want to use.
These are IRC, ICQ and Aim.
I didn't change anything in my Network configuration except of
deactivating my firewall, for it blocked Pidgin all the time (and didn't
