discovered that I'm able to register a key and acquire a reservation
using that key for the host I have generated the key to. BUT, when
trying to unregister a key from another host I get errors.

It sounds like you might have a local config file specifying HDMI as
your default sink. Try removing:
~/.config/pulse
and then reboot.
Separately, I notice your system seems to be some months out of date.
Please update it by running:
sudo apt update
sudo apt full-upgrade
and then

This is the intended default behaviour of Ubuntu; to automatically
switch to the audio device most recently plugged in.
To disable this feature, please edit /etc/pulse/default.pa and comment
out the line:
load-module module-switch-on-connect
making it:
# load-module
Though if you use "Ubuntu on Wayland" then you need to set:
gsettings set org.gnome.mutter experimental-features "['scale-monitor-
framebuffer']"

That would probably be because a window in the foreground prevents
fullscreen unredirect from being used.
I suggest if you need both fullscreen window support and fractional
scaling then logging into "Ubuntu on Wayland" might be a better option
right now.

Probably kernel-5.4.0.15 will have all needed patches for supporting sof
driver. But the sof-firmware has not been integrated to linux-firmware. So when
.15 kernel is ready, we could manually install the firmware and alsa-ucm-conf
