Greetings Keren; First let me sat that your curricula vitae is very impressive, and your interest in technical writing comes at a most opportune time. We are currently in the process of updating our user documentation and a person with your background would be a wonderful addition to the documentation team.
We use Writer, the word processor module of Apache OpenOffice (AOO) along with other modules as needed to create the documentation files, and GitHub/Gitbox for version control. The process is an iterative one. Writer is able to track changes. The first person sets the track changes on, makes the necessary changes, then sends the changed file back to the online repository. A second person pulls the changed file to their local copy of the repository and reviews the changes and either accepts or rejects them as well making additional changes and adds any comments that may be needed and sends it back to the online repository. This process iterates until their is agreement that the file is ready to publish. If this is something that you would like to pursue then I would suggest that you subscribe to the documentation mailing list by sending a blank e-mail to doc-subscr...@openoffice.apache.org. You will receive an e-mail back from the list management software; be sure to check your spam folder as well as some mail clients will mark them as spam. Just reply to that message and you will get a mail back,which may end up in spam as well, saying that you are subscribed. Also with your permission I will forward your introduction mail to the doc@ list. Another task you may be interested in is translating the software into Chinese. We have both variants in our translation software.
