As Tim has commented, Yelp is an important part of stock GNOME, and it should remain untouched. Technically, you could have XFCE, KDE, etc programs in your Ubuntu GNOME machine; having a branded Help application may lead to misunderstandings, as a user may think it will contain documentation for all the programs, when this is clearly not true.
