As fcitx is not included in any flavor of Ubuntu (except Ubuntu Kylin) by default, I'm not sure it is worth increasing the ISO image size to accommodate this.
As such, for Chinese users who wish to use Ubuntu Studio's benefits in their native language input, I'd recommend installing Ubuntu Kylin then installing ubuntustudio-installer, available in the repos. Otherwise, installing fcitx-table-cangjie3 post-installation should be rather trivial.
