And where does this leave the boiling point of water? Is it still exactly
at 100 °C?
The boiling point of water isn't a constant in the same way as the triple
point. It depends on atmospheric pressure. The lower the pressure the lower
the temperature at which it boils.
I also understand that vaporisation actually occurs at all temperatures. The
boiling point is when all molocules lose their grip and escape the mutual
bondage. It isn't so distinct a point as freezing.
