Max,
I use Fedora Core 3 and Gnome. I open the file from within OpenOffice. I don't have any trouble until I try to save, at which point OO crashes. I also get the same problem with a newly created OO spreadsheet if I use a name w/ an ampersand.

which distro do you use? which window-manager? do you open the file from within
OOo or from commandline or from the filemanager of your distro?
