On the classical side, I second the recommendations of 

Glenn Gould - Goldberg Variations
Malcom Frager plays Chopin

I would also recommend the RCA Red Seal recordings of Artur Rubinstein
playing Chopin Nocturnes, Ballades, and Waltzes.

On the jazz side, you have to check out Marcus Roberts.  In particular
his CD "Alone with Three Giants", playing the music of Jelly Roll
Morton, Duke Ellington, and Thelonius Monk is absolute genius!
