On the classical side, I second the recommendations of Glenn Gould - Goldberg Variations Malcom Frager plays Chopin
I would also recommend the RCA Red Seal recordings of Artur Rubinstein playing Chopin Nocturnes, Ballades, and Waltzes. On the jazz side, you have to check out Marcus Roberts.
