I went to the Cancun area a few years ago.  We bypassed Cancun and went 
straight to Isla Mujeres - an island not very far away, which was much 
more low key (it was spring and we wanted to avoid the spring breakers). 
  We did a fabulous snorkling trip from there (just an afternoon). 
Beautiful beach, too, with little tiki bars, lots of happy hours, and 
places to hang your hammock (a necessity on a mexican vacation, if you 
ask me!  they're cheap down there!).

We stayed in a youth hostel and were on a budget, so I have no 
recommendations for food or anything.

Chichen Itza (sp?) was a fun day trip to go on too - they're Mayan ruins 
south of Cancun where you can climb a big pyramid.
