It depends.  The name of a field can be considered a proper noun while it
may not be considered so in documentation.

I generally follow rules similar to titles: if the instance references a
specific thing, emphasize it (via capitalization, underlining, etc).  For
example:

"To log in to the system enter your password in the "Password" field."

The first instance of password is a regular noun while the second is a
proper noun referring to a specific field.
