Here is my mom's recipe for meatballs when she makes spaghetti. It makes
enough meatballs for a pot of spaghetti to serve a family.
Preheat oven to 350 degrees F.
1 pound lean ground beef
1 egg
1 tsp onion powder
1 tsp Emeril's steak seasoning
1/2 cup Italian-seasoned bread crumbs
1/4 cup parmesan cheese
Mix all ingredients until well-blended. Make into meatballs. They won't change size all that much during baking, so make them as big or small as you want them to be. I usually make them about an inch and a half across (about the size of a golf
ball). Spray cookie sheet with Pam. Place meatballs about an inch apart. (Depending on the size, I can usually manage four or five along the sheet, and three or four across. Bake in oven 350 degrees F for 25 minutes.
