These are my favorite oatmeal cookie.  The coconut keeps them nice and
chewy.

 

 

Raisin Oat Chews

>From Pathmark coconut bag

1 stick butter softened

1/2 cups sugar

1/2 cup packed brown sugar,

1 egg,

1 teaspoon vanilla

1 cup all purpose flour

1 teaspoon baking powder

1/4 teaspoon salt

1 cup raisons

1 cup quick oats

1/2 cup coconut

 

Preheat oven to 350 degrees.  Cream butter and sugars.  Mix in flour, salt
and baking powder.  Fold in Oatmeal, raisins and coconut.  Drop by
teaspoonfuls on cookie sheet.  Bake  9 to 11 minutes. Or until bottoms are
lightly browned.

 

For bars:  Spread in a 9 by 13  and bake for 18 to 20 minutes.
