Oh, I want to try these! Wondering if you have to put the cookies on the
pans and refrigerate each! Pan for fifteen minutes, or can just chill the
dough for 15 minutes, and then! Proceed to put them on the pans and bake!
Please clarify! Anxious to make these for my sons for Christmas.

Coconut Butterballs

1 cup butter or margarine

1/4 cup sifted powdered sugar

1 tsp. lemon extract

2 cups sifted flour

1-1/2 cups flaked coconut

Sifted powdered sugar

Cream butter until light and fluffy, gradually adding 1/4 cup powdered

sugar, then lemon extract. Blend in flour, then coconut. Mix well.

Shape dough into 1 inch balls, place on ungreased cookie sheets and

refrigerate for 15 minutes. Bake at 325 for 10 - 12 minutes, or until done,

and then roll cookies, while still warm, in sifted powdered sugar.
