Is there a good (newbie) approach how-to that you can recommend?
It's a bit dated, and refers to a previous version (so omit the kludgy touchup edits it recommends), but ... You might find some useful hints here, especially the last item labeled 'ProcMail', which has a config to get the email where Courier IMAP expects to see it, which is, I think, at the heart of your problem:
