I could be wrong, but I don't think that would be possible (certainly
not very easy to do). The problem is, symbolic links are a feature of
the filesystem in the kernel. Because of this, they are not aware of
(and cannot link to) gvfs URI's.

Like I said though, I could be wrong. I'll let someone more knowledgable
than myself comment ;)
