I'm a little late to the party, but I use xwiki and have been real happy with it. I tried a lot of other wikis before and hadn't really been satisfied with the functionality.

I really like Confluence as well, but it does come at quite a cost after the initial 10 users.

Excellent suggestions by all. I've decided to give wikispaces a go.

The non-profit I work at has a bunch of adult education courses and
instead of a trillion Word docs floating around the ever expanding
company shared samba drive I figure we'll try this on a very limited
basis and see how it goes.

Thanks!
