One of the first things I do when setting up any server, is download the source to latest stable kernel, configure it for just what's needed, and install. I never trust/use stock kernels. Same thing for perl modules: fire up CPAN.pm and install a string of modules, rather then use modules supplied by the dis tribution. I keep copies of the latest Apache/mod_perl/Embperl on a local system, together with a homebrewn build.sh. In an hour I can have Debian with the latest kernel/Apache/mod_perl/Embperl/etc installed in less then 250MB. This may be off topic, but what do others do? Or is this a pretty touchy topic?
