My guess is that you are not giving the server a chance to sync the changes you've made. Entourage works with an offline cache of your IMAP server that it periodically synch back to the server. If you make a bunch of changes and quit before Entourage re-syncs, then the changes aren't communicated to the server. Before quitting Entourage, hit the Send & Receive button to sync.
