This is what I am trying to do:
Our client uses Entourage to pull in email from the mail server and these are stored on their local machine once they have downloaded. To guide against file corruption or hard drive failure, I am looking for a way to have their mail be synchronized with the mail server and the local account. This way these files are backed up every night and can be restored if needed. Thanks

What type of account?
IMAP, POP3 or Exchange?
If it's IMAP or Exchange then there is nothing to do – the mail IS stored on the server by default, unless you have rules moving the message to folders under the "On My Computer" section.
If it's POP3, then there is a setting under the 'options' tab of the account settings to "Leave messages on Server", although this is not always 100% reliable with all POP servers.
