Do a find of the user using their old name using ADUC. Righ click and RENAME the account. Once that is done, save the changes. You may want to keep the old address and the new address together for a while so mail won't bounce to the old address. If so, uncheck the box that says to update the address IAW recipient policy and add the user's new SMTP address and mark it as the default reply to address.
