Many options, in order of my personal preference:

-Run a UNIX syslog server (get a big hard drive and an old
PC with Linux and you're all set).

-Run the shareware software "Kiwi's Syslog Daemon".

-Use NT 4.0 for the Cisco Syslog Server!

My opinion is that the Cisco Syslog Server is crap, like all 
Cisco software I have encountered (Firewall Manager, CiscoWorks,
etc.).   :)
