Of course, the super deluxe solution would be PoE but that is a recipe for project drag because now you'd have to add a litte switch-mode converter. What we do in medical a lot where we need super patient isolation is ferrite transformers, choke, rectifier, linear regulator. That keeps it isolated, and in your case CAT5 has four pairs while you will only need two pairs per box.
