Hi Alex,
   This is something that comes up increasingly regularly it seems; this 
thread is a relatively recent one that may explain why the delay:

The short version seems to be - you want to amalgamate the datasets into 
the fewest number of layers/stores possible (i.e. geotiffs into Image 
Mosaics).
