Well, I've worked with a few ircd's, so here goes...
I haven't actually worked original ircd, but it was the one that all the
rest were based off of, so I imagine it's pretty stable.
ircd-hybrid is the one used on EFNet, so it scales pretty well and you can
be assured it's at least moderately stable. One good thing about this one
is that the code for the channel and nickname services used on EFNet has
also been released and is designed to work with ircd-hybrid, (look for
hybserv on freshmeat) and so it should be relatively easy to get those
services working. (Theoretically; I haven't done it myself.) ircd-hybrid
is most likely the ircd that I'll be looking at to modify to create my own
ircd whenever I have time.
Bahamut is based on ircd-hybrid and another ircd named Dreamforge, and
boasts extra features to both. Performance should be similar to ircd-hybrid.
It's currently in use by the DalNet IRC network, having replaced Dreamforge.
ircu is the ircd used by UnderNet, and has various optimizations like flood
protection and other stuff. ircu was my first experience setting up an ircd
and the current ircd I use is based on this. Generally not a bad one.
Probably the easiest one I've seen to set up and get running is StarChat's
ircd. It's originally based on Dalnet's ircd (I think back when they used
Dreamforge). I didn't see it on the list on freshmeat, so here's a link:

Good luck...I haven't tried all of them, and I don't know how well a
non-ircd alternative will work for you (because I really don't know exactly
what you're trying to do), but I hope this helps some. Feel free to toss me
