In case it isn't immediately clear, you can still run the old Eloquence 5 on WE7. It's just not going to ship with it anymore. But keep around an old WE 6.1 CD, make sure the old Eloquence is installed, and just leave it there and don't worry about the new version. It's not amazingly recommended, given that GW went with updating Eloquence for plenty of good reasons, but it's not like WE7 won't work with the old Eloquence, if that's really what you'd like to use.
