Laurie, It is a little fiddly but as long as you keep the animal frozen, you can dissect out the muscle, quickly place it on some OCT on a chuck and freeze the chuck. Try to not let the tissue thaw.
How big is the animal? You could do this on the freezing plate of the embedding centre or on the cold shelf in the cryostat. It is important throughout this process to not let the tissue thaw too much.
