Sure you can define more NICs.

Log into the virtual machine for each guest.
#CP DEFINE NIC blah bla
BEGIN
#CP DISC

Then you can ssh in and activate the new NIC in YaST. Make sure that you add
the new NIC address to the CP directory entry for the guest so it shows up
on the next logoff/logon of the guest virtual machine.
