From the individual details there are a couple of ways. The easiest is to use the small icon of two older people on the left end of them below the details. Those are the parents, and will allow you to add a new set of parents or remove the current ones. Alternatively, from a right click on the person you should find an entry to add to new parents. Very useful when dealing with adoptions.
